Tina Leigh’s Glowing Greens & Hemp Soup
Today, we welcome gorgeous Tina Leigh. Tina Leigh is the author of Balanced Raw: The 4-Week Program Using Raw and Cooked Foods to Achieve Weight Loss, Optimal Health and Vitality. She an inspiring and compassionate holistic wellness practitioner, author and therapuetic chef. She specializes in mindful eating and integrates the concepts of cleansing, Ayurveda and plant-based cuisine into her practice. Today, she shares with us one of her favorite superfood soups!
Makes about 4 1-1/2 cup servings
“I’m a real sucker for good soup,” says chef Tina Leigh. “Especially when it contains super nutritious ingredients like Swiss chard and hemp seeds, which happen to be one of my favorite superfoods. This recipe takes less than 30 minutes to prepare and can be enjoyed guiltlessly by the bowl full or as the perfect starter to any meal.”
1 teaspoon coconut oil
1 cup sweet onion, sliced
1 medium garlic clove, minced
4 cups vegetable stock
4 cups green Swiss chard, ribs discarded, and chopped (broccoli florets also work well in this recipe)
3 tablespoons yellow miso (I like to use soy-free chickpea miso)
2 tablespoons hemp seeds
¼ cup coconut milk
¼ teaspoon red pepper flakes
2 teaspoons coconut aminos (you may also use wheat-free tamari)
1. In a soup pot over medium-high heat, warm coconut oil. Add onions and garlic and heat for four minutes. Add vegetable stock and bring to a low boil. Add the Swiss chard (or broccoli) and let cook for two to three minutes.
2. Remove from the heat and add the miso, hemp seeds, coconut milk, red pepper flakes and coconut aminos. Stir to combine.
3. Transfer to a blender, tilt lid slightly to vent, cover with a kitchen towel and blend on high until smooth, about one minute.
4. Divide between soup bowls and garnish with hemp seeds.
