They contain cancer-fighting ellagic acid, skin beautifier vitamin C, fiber, and polyphenols to keep your bones strong and your blood cholesterol low. This superfood dish is an awesome way to get berries, nuts and quinoa all in one place. Plus, it’s rich in protein, fiber, vitamins, minerals, amino acids, enzymes and phytonutrients! Oh, and I must mention that it is yummy, yummy, yummy! Try it!
  • 1 tablespoons extra-virgin olive oil
  • 2 tablespoons orange or tangerine juice
  • 1 tablespoon coconut vinegar or apple cider vinegar
  • 2 teaspoons finely chopped shallots
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 2 cups cooked quinoa (any color will do)
  • 1 cup chopped peach, apricot or nectarine
  • 1 cup mixed fresh berries, such as blueberries and blackberries
  • 2 tablespoons chopped raw or toasted tree nut of choice or sunflower seeds
  1. Whisk oil, orange juice, vinegar, shallots, salt and pepper in a large bowl.
  2. Add cooked quinoa, peach, berries and almonds; gently toss to combine.
