Manuel Villacorta’s Zest Sacha Inchi Cilantro Dressing

Sacha inchi seeds and oil are a Peruvian powerhouse of omega-3 fatty acids. The sacha inchi plant is the richest source of omega-3s on the planet. Foods high in omega-3s have been shown to have a positive effect on brain health, reduce inflammation and aid in the prevention of diseases such as cancer, coronary heart disease, hypertension, and, potentially, rheumatoid arthritis.

Get all the omega-3 benefits of sacha inchi by preparing this quick, easy and delicious recipe. This tangy and herbaceous dressing goes great with a simple salad of mixed greens, but can also be drizzled over roasted veggies, baked chicken, or a baked potato.



3 cloves garlic, crushed
⅓ cup lime juice
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons chopped cilantro
½ cup sacha inchi oil
½ cup nonfat Greek yogurt


Combine the garlic, lime juice, salt, and pepper in a bowl. Slowly whisk the sacha inchi oil into the lime juice mixture until thickened. Whisk the Greek yogurt into the mixture. Refrigerate for 15 minutes or overnight.
