Celery Salad: Make it Your Way!

Turn a Vegetable Crisper Staple into Salad that is Both Nourishing and Refreshing

A mixed lettuce salad is a wonderful thing. But eaten everyday, lettuce can get boring. And expensive. Enter celery, an overlooked but delicious way to build a better salad. Here, we offer a recipe with ingredients found in almost any kitchen. It’s full of fiber, vitamins and antioxidants, it’s a healthy way to get your five daily servings of vegetables.


Make-It-Your-Way Celery Salad

2 generous tablespoons coconut cream

1/2 to 1 tablespoon cilantro or parsley, chopped (optional)

1 tablespoon lemon juice

2 average-sized celery ribs, cut in thin slices on the diagonal

1 crisp, not-too-tart apple (gala, fuji, red delicious) or Asian pear or small cucumber, cut in thin pieces then chopped into same size as cucumber pieces

Salt and pepper to taste


In a medium-size bowl, whisk together first three ingredients. Add celery and apple. Stir to coat. Season with salt and pepper, as desired. Chill until serving.

 Note: For an elegant presentation, cut celery and apple into two-inch julienne and proceed with recipe.
